Easy & Quick Low Carb Cottage Pie.

This low-carb recipe makes eating vegetables more appealing, even to children! And, it only takes 15 minutes of preparation while the oven is warming up. It may appear to be complicated, but actually making this recipe is easy peasy.


1 serving - Kcal: 365, Fat: 16g, Carbs: 25g, Protein: 35g.


This recipe yields 3 servings;

Cauliflower Mash

1 large head cauliflower

1 tbsp olive oil

Salt, to taste

Pepper, to taste


Filling:

1 tsp olive oil

1 garlic clove

1/2 onion

1 carrot

1 small stalk of celery

50g frozen vegetables

250g turkey mince

1 tbsp flour

1.5 tbsp tomato paste

200ml chicken stock (low sodium)

1 tsp Worcestershire sauce

Thyme, to taste

Salt, to taste

Pepper, to taste


Topping:

3 tbsp grated Parmesan cheese


Directions:

1. Cut cauliflower into florets and steam until soft, (approx. 10 minutes).


2. While the cauliflower is steaming, mince garlic and finely chop onion, carrot, and celery. Heat up olive oil in a skillet over medium heat. Add garlic, onion, celery, and carrot, and cook for a few minutes until fragrant.


3. Add turkey mince to skillet and cook until no longer pink. Add frozen vegetables and cook for a few minutes, stirring frequently. Add tomato paste, thyme, and Worcestershire sauce. Stir to combine. Dissolve flour in chicken stock, and add to skillet. Stir and cook until thickened to desired consistency. Remove from heat. Taste and add salt and pepper according to your preference.


4. Let the cauliflower cool down a bit, transfer to food processor / high-speed blender & puree until smooth. Add olive oil and a sprinkle of salt and pepper. Taste and add more salt and pepper according to your preference.


5. Pour the turkey mince mixture into a baking dish. Let cool down a bit. Spread cauliflower mash evenly over the turkey mince mixture in the baking dish. Sprinkle the parmesan cheese on top of cauliflower mash before baking. Bake at 200 C for 20 minutes or until golden. Remove from oven and serve. Enjoy!


Bonus tips -Instead of turkey, this recipe will also be great with beef or lamb mince.
